Chicken and Rice Soup
/Ingredients
2 pieces of chicken (dark meat is better)
4 chopped carrots
1 chopped onion
4 stalks chopped celery
1-2 cups rice
1 tsp. thyme
2-3 bay leaves
8-10 cups chicken broth
Directions
Saute veggies in some oil until soft.
Add chicken broth, chicken, bay leaves, and thyme.
Once everything is cooked, add 1-2 cups raw rice and cook until rice is completely cooked and falling apart.
Add a squeeze of lemon if you have it!
