Turkey Tetrazzini

Ingredients

  • 2 cups shredded turkey

  • 16 oz. pasta shape of your choice

  • 1 can cream of mushroom

  • 1 cup sour cream

  • 2 cups chicken broth

  • 1 cup parmesan cheese

  • 1 TBSP garlic powder

  • 1 tsp. black pepper

  • 1 package (frozen or canned) peas

  • 1 cup shredded monterey jack cheese

Cook pasta in boiling water until cooked all the way through. In a large skillet, mix turkey, canned soup, sour cream, chicken broth, parmesan cheese, and spices and cook until combined. Add peas and mix with cooked pasta.

Bake in a 9x13 baking dish at 350 for 30 minutes. Top with jack cheese and bake another 10 minutes.

Turkey Pot Pie

Ingredients

  • 2 cups cooked, shredded turkey

  • 2 cups diced potatoes

  • 2 cups diced carrots

  • 1 diced onion

  • 4 stalks diced celery

  • 1 can corn

  • 2-4 cups chicken broth

  • heavy cream

  • butter

  • 1 tsp salt

  • 1/2 tsp pepper

Cook all vegetables and turkey with broth until the vegetables are cooked and soft. Add the butter and heavy cream at the end to help it thicken and taste for salt and pepper. If it needs more thickening, you can add some instant mashed potato flakes or a cornstarch/water mixture.

Place into pie crust or top with biscuits and bake at 375 for 30-40 minutes.

Turkey Corn Chowder

Ingredients

  • 2 cups cooked, shredded turkey (or chicken)

  • 6 cups chicken broth

  • 1 can corn

  • 4 diced potatoes

  • 1/4 cup corn starch mixed in 1/2 cup water

  • 1 tsp thyme

  • 1/2 tsp salt

  • 1/2 tsp pepper

  • 2 bay leaves

Cook in Instant Pot for 30 minutes on high. If you would like it thicker, add a couple TBSP instant mashed potatoes and taste for salt. Add more salt if needed!

Grandma's Banana Muffins

Ingredients

  • 1 egg

  • 1/3 cup milk

  • 1/2 cup oil

  • 1 cup mashed bananas

  • 2 cups flour

  • 2/3 cup brown sugar

  • 1 TBSP baking powder

  • 1 tsp salt

Instructions

  1. Preheat oven to 400 degrees Fahrenheit.

  2. Stir together egg, milk, oil, and bananas.

  3. Add and stir remaining ingredients.

  4. Bake for 15-20 minutes

Yield - 12 regular muffins or 6 large muffins

The Perfect Banana Bread

Ingredients

  • 1 cup of sugar

  • 1/2 cup softened butter

  • 2 eggs

  • 2 cups all-purpose flour

  • 1 teaspoon of baking soda

  • 1/2 teaspoon of salt

  • 3 bananas, mashed

  • 1 teaspoon of vanilla

  • 1/2 cup of chopped nuts (optional)

Instructions

  1. Heat oven to 350 degrees Fahrenheit.

  2. Cream sugar and butter. And eggs and beat well.

  3. Add flour, baking soda, and salt and mix until just combined.

  4. Add bananas, vanilla, and nuts if using. Mix one more time.

  5. Pour into greased loaf pan and bake for 50-60 minutes.

Cornbread Dressing

Ingredients:

  • 3 packages Jiffy mix

  • 3/4 cup sugar

  • 1 1/2 pounds ground sausage

  • 1 pound Kielbasa

  • Turkey legs, cook and keep broth

  • Green bell pepper

  • 3 stalks celery

  • 1 onion

  • 3 bunches scallions

  • 1 jalapeno

Instructions:

  1. Cook Jiffy mix with extra 1/4 cup sugar per box. Bake as directed on box and crumble in a bowl.

  2. Cook everything else until onions are translucent.

  3. Pour into crumbled cornbread and stir.

  4. Put into large pan and add stock.

  5. Bake 25-30 minutes at 350°F.

  6. When brown on top, it’s done.

Homemade Pie Crust

Ingredients:

  • 2 cups flour

  • 1 teaspoon salt

  • 3/4 cup butter flavored shortening

  • 4-6 tablespoons ice cold water

  • 1 teaspoon white vinegar

Instructions:

  1. Cut all dry ingredients together with a pastry blender until crumbly.

  2. Add vinegar and 4 TBSP of the water. Stir and see if it comes together into a ball. If not, add the remaining water.

  3. Separate into 2 balls and roll out with a rolling pin.

  4. Use with any savory or sweet pie. (I recommend chicken pot pie.)

Peanut Butter Protein Bars

This is one of Dave’s favorite treats.

Ingredients:

  • 2 cups peanut butter

  • 1 3/4 cup honey

  • 2 1/4 cup vanilla protein powder

  • 1 cup quick oats

Instructions:

  1. Add peanut butter and honey together in microwaveable bowl and microwave for 90 seconds

  2. Add vanilla protein powder to bowl and stir together.

  3. Add oats and stir.

  4. Place in 9x13 pan, cover, and let cool.

  5. Cut into bars and serve.

Crock-Pot White Chicken Chili with Cream Cheese

Ingredients

chicken chili
  • 1 pound chicken, chopped

  • 3 cups chicken broth

  • 1 chopped onion

  • 2 cloves chopped garlic

  • 3 cans white beans

  • 1 can diced green chilies

  • 1 can green enchilada sauce

  • 8 oz. cream cheese

  • 1 cup chopped cilantro

  • 1 tsp cumin

  • 1 tsp oregano

  • 1/4 tsp cayenne pepper

Instructions:

Add all to slow cooker and cook on high for 5 hours or low for 8 hours. Serve with chips, olives, limes, and sour cream. This would freeze well!

Grandma's Apple Crisp

Topping Ingredients

  • 1/2 cup flour

  • 1/2 cup brown sugar

  • 1/2 cup oatmeal

  • 1/4 cup butter

  • 1 tsp cinnamon

Filling Ingredients

  • 4-7 apples, depending on size - peeled and sliced

  • 1/4 cup brown sugar

  • 1/4 cup water

Instructions

  1. Cut all ingredients for the topping with a pastry blender until crumbly. I tend to double to topping because more is always better. Ha!

  2. Place filling ingredients in 9x9 glass baking dish and stir. Cover the apples with the topping and microwave for 10-13 minutes. Let it sit for 10 minutes and enjoy any time of the day. Breakfast, especially.

Homemade Lasagna Sauce

Ingredients:

  • 1 pound spicy Italian sausage (you can also use ground beef)

  • 1 medium onion, chopped

  • 1 clove garlic, crushed

  • 1 tablespoon chopped fresh or 1 teaspoon dried basil leaves

  • 1 teaspoon sugar

  • 1 can (16 ounces) whole tomatoes, undrained

  • 1 can (15 ounces) tomato sauce

Instructions:

1) Cook sausage, onion, and garlic together until cooked through.

2) Stir in the basil, sugar, tomatoes, and tomato sauce.

3) Bring to a boil, reduce to a simmer. Simmer uncovered about 45 minutes.

4) You can use to make lasagna right away or freeze until later use.

The Perfect Chocolate Chip Cookies

Ingredients:

  • 3/4 Cup Sugar

  • 3/4 Cup Packed Brown Sugar

  • 3/4 Cup Softened Butter or Margarine

  • 1 Teaspoon of Vanilla

  • 1 Large Egg

  • 2 1/4 Cups All-Purpose Flour

  • 1 Teaspoon Baking Soda

  • 1/2 Teaspoon Salt

  • 1 Cup Coarsely Chopped Nuts, I like chopped almonds

  • 2 cups Semisweet Chocolate Chips

  • Coarse salt for sprinkling

Instructions:

1) Heat oven to 375°.

2) Cream sugars and butter until light and fluffy.

3) Add egg and vanilla.

4) Stir in flour, baking soda, and salt

5) Stir in nuts and chocolate chips.

6) Scoop on a cookie sheet and sprinkle with coarse salt before baking.

7) Bake 8-10 minutes or until light brown and let them cool for 5 minutes on the pan.

Crusty No-Knead Bread

Ingredients:

  • 3 cups all purpose flour

  • 1/2 tsp active dry yeast

  • 1 tsp salt

  • 1 1/2 warm water

Instructions:

Mix all together in a bowl, cover, and let it sit on the counter for 8-24 hours. Stir and let rest for 30 minutes while preheating the oven. Preheat dutch oven in the cold oven and set to bake at 450 degrees.

Pull the hot dutch oven out of the oven and sprinkle with cornmeal. Place dough into the pot and put the lid on. Bake in the oven for 30 minutes, remove the lid and bake another 15 minutes. It will be easier to slice after it sits for a couple of hours and is cool. Enjoy!
